The Original Sushi Competition was founded, in the words Mr Kunihiro
Kondo, the head of its committee, "as an effort to combine the imagination
and ingredients of the West with centuries of traditional Japanese
cuisine to inspire a totally new sushi, a British sushi". Entrants
were asked to create their own original sushi recipes and more than
500 recipes were sent in from people of a broad range of ages, ethnicity's
and backgrounds, many of whom were blessed with great imaginations
and a significant amount of whom were from children (largely as
a result of an Original Sushi mini-event held at Henwick primary
school in Eltham, at which pupils had great fun learning about and
tasting sushi).
The competition's final event was held on the 19th of March, 2002
at the Matsuri St. James's restaurant, where the dishes of the finalists
were displayed for guests, including the Japanese Ambassador, contestants,
members of the press and judges to admire and discuss. The 6 judges,
which included Lesley Waters of BBC TV's 'Ready Steady Cook!' were
challenged by the extremely high standard of the entries and this
delayed their decision by more than an hour, but finally the award
ceremony took place and in her speech after the ceremony Ms. Waters
spoke of the significance of the event and how honoured she felt
to have been involved.
Competition
Bronze, Silver, and Gold Prizes were awarded for the adult and children's
categories, as well as a Chef's Prize, a Chair of Judge's Prize and
an overall Grand Winner. The title of Grand Winner (and the prize
of a pair of flights to Japan!) went to Maggie Thurer for her beautiful
and delicious 'Sushi Eggs Benedict' - a gourmet dish consisting of
poached quail's egg and smoked salmon on rice topped with hollandaise
sauce. Ms. Naomi Hattori and her 'Italian Sushi' took the Adult's
Gold'. Her recipe consisted of rice wrapped in seaweed, topped with
chopped tomatoes, mozzarella cheese and secured with seaweed strip
and served with a mayonnaise and miso sauce; and the Gold' in the
children's category went to Seiko Kita (aged 10) for her 'I love The
UK' Sushi - a visual and culinary treat made up of rice and carrot
topped with fried lemon sole and asparagus spears and secured with
a seaweed strip and served with a mayonnaise and miso sauce.
Since 'Original Sushi' 2002, the Matsuri St. James's restaurant has
added a sushi selection plate made up of dishes of the competition's
finalists to their menu and several new sushi restaurants have opened
in London.
Also, the dishes mentioned above and others from
the competitions finals have been collected in the 'New Sushi Calendar
2003' (available from www.eat-japan.com)
made to celebrate these creations and, as each dish is accompanied
by its recipe, give many people the chance to enjoy the dishes themselves.
In Britain, sushi just seems to get bigger and bigger as more people
discover and become familiar with the cuisine, and 'Original Sushi
2003' is just around the corner...
