The Original Sushi Competition was founded as part of the 'Japan 2001' Year of Cultural Exchange and, now in its 3rd year, it continues to raise awareness of Japanese cuisine and culture.. Its founders envisaged it as an ideal vehicle for educating people in the UK about Japanese traditions at the same time as being a means of creating new 'fusion-sushi' recipes that combine elements of traditional Japanese sushi with ingredients, cooking styles and imaginations of the UK and the rest of the World.
